Clay pot beef stew

Do you like cooking? Then, this easy recipe is for you. All you need is a few clay pots like mine or one big casserole dish. Then, you layer all your ingredients, season and stick in the oven and forget about it for 1,5 hours.

INGREDIENTS:

For 3 persons I used 400 gr of diced beef, 3 carrots, 2 onions, 2 bell peppers, 3 celery sticks, 1 tin of kidney beans, 1 tin of diced tomatoes ( you can use fresh tomatoes but I had tinned ones), salt, pepper to taste, seasoning, herbs of your choice. Dice you veg first. I normally place meat at the bottom of the pots, then layer my vegetables, add spices or herbs, seasoning and place on the deep tray, put my pots in, fill up some water in the tray and stick in the oven for 1.5 hour at 185’C. Keep an eye on the water level in the tray and top it up with hot water if needed. It keeps your pots (if you’re using clay pots like mine) crack free. When topping up water, make sure it is hot, otherwise the pots will crack also.
